  • Fresh Roasted Tomato Salsa

    Had an over abundance of tomato's and peppers out of my garden so I whipped up a batch of salsa last night.. Give it a shot -- It's GOOD!!

    4 to 6 large tomato's cut in half and cored -- not peeled
    1 large onion sliced
    4 to 6 cloves of garlic
    6 hot peppers (I used serrano but any hot pepper should work)
    olive oil
    3 Tbsp of lime juice
    1/2 cup of chopped cilantro
    Salt to taste

    Place the cored tomato's (skin side up), onion slices, garlic and peppers on a cookie sheet and drizzle with olive oil. Place under the broiler and roast for ~10 minutes or until everything gets a nice brown char on it. Take it out and put it in a food processor with the lime juice and cilantro. Process to the desired consistency, add salt and go to town!
