      Try this one;
      1 bunch cilantro
      1 bunch green onions
      1 white onion
      3 large cans diced tomatoes
      6-8 whole jalapeno peppers
      ¼ cup minced garlic
      ¼ cup accent
      2 tblsp. salt
      ½ cup vinegar
Process first 5 ingredients to desired chunkiness
Boil vinegar, accent and salt for 1 minute
      Add processed ingredients
Bring to a light boil for 1 minute
Let cool and put into quart jars (makes 4 quarts)
You might want to adjust the salt.

I make fresh (not canned) salsa.

        I chop in my chopper
        2 onions
4 jalepeno's (remove some seeds if you dont want to scortch your mouth(
        3 garlic cloves
        cilantro to taste

then I put that in a blender and open 1 large can of whole tomatoes and pour the juice into the blender with veggies, and mix well.

Then I add the tomatoes from that can and another can of tomatoes (but not the juice from 2nd can) and mix well. Add salt/pepper, and its awesome! No cooking at all. And everyone loves it.

Not a recipe but there is a salsa and chip company -- think there out of Uvalde called Julios. HEB is the only one around here that carries it. In a platic tub in the cold section -- over by the milk and eggs in the one at 45 and 646. Cant beat it!! the chips are great too!! I get the mild -- hot is WAY hot. I'm a big ween though!

I use this on fish tacos, taco salad, or just about anything.

              1 cup ranch dressing
              1 cup fresh cilantro leaves
2-3 limes for the juice only
4-6 jalapenos cut up( save some seeds)
              1/2 teaspoon chili powder

Add all ingrediants and blend well. Let sit over night for better flavor. More seeds you add the better(hotter) it gets. You can add a little red pepper if needed too.

              Good stuff!

                  10 roma tomatos
                  1/4 red or white onion
                  2 cilantro bundles
                  1 clove garlic
                  1 tbsp sugar
                  1 tsp salt
                  2 jalapeno
                  2 cerrano peppers
                  1 tsp chili powder
                  2 limes

Throw everything but the limes in the food processor, squeeze limes in with everything else. Turn on and chop for 1-2 min.
Pour in a bowl and serve!

Fry fish however you like. I prefer to pan fry with Italian bread crumb/flour mixture in real butter. I squeeze lime on the fish as its frying.

Place fried fish on white corn tortilla, or flour. Add a little shredded purple cabbage and pico. Then add the sauce from above. Some people like cheese but I don't.

Then eat...pretty simple. Goes good with black beans and rice too.

                        Keep them coming.
Mrs.chasingtail is in the lead for fresh salsa.
2nd hammer. The sugar kinda weird and I found if I roasted the tomaters it improved.
Beandaddy for jarred salsa need the accent and vinegar for jarring.
Flatout for fish taco or veggie dip.
Oh and 007 win hands down for the bachelor salsa.

P.S. Please no more entries in the bachelor category . You are up against way to much to waste your effort!! LOL
