I've always just experimented with my "Peck of the Rooster."
I'll dice 3 green and 3 red bell peppers 1 whole onion and 10 fresh japs then squeeze 2 fresh lemons into the mix and seal it in a tupperware bowl and let it stew. I'll shake it up every 20-30 minutes for a few hours and let 'er rip.
I guess I should have written it down as I was going......usually turns out pretty good though!
...edit....I always de-seed the bell and jap peppers.
