Actually the locals prefer Silver/Coho for smoking the have a tad more oil than the Sockeye. We did smoke some Sockeye and it was really good. Gonna smoke some silver soon. I had 54lbs of fillets out of those 6 shown. A lot of the guides keep the roe to fish with. Never heard or seen if they keep any to eat.
