  • Compound butter for corn on the cob.

    When I used to come out of the Mexican grocery store there would be a roasted corn stand that would sell roasted corn in a cup with chili lime cheese which was sooo good it inspired me to write this recipe! Plus I hate it when the butter run right off your corn on the cob and ends up on the plate. This recipe calls for butter but you can probably use margarine just as well.

    You will need !

    One stick of softened butter (un salted is my preference it's a better product! and I can control the salt content)
    1 tsp Chili powder
    1 tsp Lemon pepper
    1/2 tsp Salt give or take to taste (less if your using salted butter)
    4 tsp Goat cheese at room temp.

    Mix all ingredients in a bowl and dump out on a sheet of plastic wrap. Try to form a log and fold over the plastic wrap and tuck the to help shape it. Then roll it up and twist the ends!🙂 Place in the fridge to set and your set!

    I put some it the mushroom caps too.
