People have asked me to post this recipe. It is one of the simplest and fastest ways I know to cook delicious scallops. Feel free to add your favorite ingredients, such as thinly sliced onions, a splash of white wine, finely chopped chives or parsly. Squeeze in a fresh lemon if you desire. Have fun with it. 1 lb scallops
1 pk fresh sliced mushrooms
4 cloves of garlic, finely chopped or crushed(I sometimes use minced garlic for it's convenience)
1 Tbsp olive oil
Fry garlic and mushrooms with oil in a medium hot skillet for 2-3 minutes. Don't get too hot.
Add scallops, lightly cook on one side for 1 minute, then turn to other side for an additional minute.
Remove from heat and cover for 1-2 minutes. Serve!
