Thermostat Gasket Leak

First off, let me say I suck at mechanics.......now on to my question.

I have recently noticed a leak on my LH side thermostat cover. I will changing out both gaskets tomorrow afternoon. My two questions are:

1.) Should I remove and discard the thrmostats. I have read were guys don't run them.

2.) When I reinstall the thermostat cover plate, should I put some kind of medium strength thread locker or thread sealant?

I always use anti seize... Makes changing down the road a lot easier.
