I made a pot of chili a couple of days ago and for some reason got a craving yesterday for enchilada's. I took some of the leftover chili, mixed cream cheese and cheddar jack shredded cheese into it and rolled it up in corn tortillas, put a little of the chili/cheese mixture on top, poured enchilada sauce on top and covered with more cheddar jack cheese. Put it in the oven at 350 for about half an hour and it turned out pretty dang tasty if I do say so myself.
