when we fry fish for 500+ people we use Styrofoam coolers, lined with paper towel, but put lid on side ways to let steam out. 2 baskets of fish per cooler, if you over load coolers, crust will come off.

Fry the fish a little longer and crispier than normal as they will soften up in steamy ice chest

Moma used grocery sacks immediately after takin the fish outa the grease. Then she would put them in a cabinet or in the wash house where it was always warm. Frys too. But she always looked into the bags for bugs and mouse droppings. dbarham's idea of a large cooler may be great too but I would prop the lid open a little to let moisture out. gotta try that myself.

Big Fish Fry - How to keep everything warm
I have about 20 adults and 20 kids coming over to the house after church on Sunday. I'm going to fry up several bags of feetch and get the freezer cleaned out.
I have a 12 quart cast iron dutch oven that I fry in on top of my propane burner so I need to get a head start on the crowd before lunchtime. What is the best way to keep fried fish and hushpuppies warm? Put it in the oven on a rack at 200?
