Here is a quick and easy one for the camp.....
Makes 4-6 servings
1 tblsp oil
1 lb deer sausage, chopped into coins
3 15 oz can of white beans (Great Northern), drained and rinsed
2 cloves garlic, chopped
2 c of chicken broth
1 bay leaf
1 hand full of Arugula (I know, I know...trust me)
Salt and pepper
Heat the oil over med-high heat. Add sausage and brown for 5 minutes. Add beans and garlic. Stir well and cook for 3 minutes. Add chicken broth, bay leaf and a hand full of Arugula. Bring to an easy boil, then reduce heat to med-low. Cover and cook for 10 minutes. Salt and pepper to taste. DONE!
