Made it to Biloxi last night around 10PM went straight to Casino made 10 bucks turn to 40 had a Heineken and called it a night. I'm supposed to meet up with Bonito's (from 2Cool) brother in Gulf Breeze he's going to set me up with some Pompano Rigs and jigs. Then its off to Destin for my sisters fiance's bachelor party! Hopefully I will have some pics and reports Sunday when I get back.

Funny you mention that because I just filleted a pompano less than an hour ago. Buddy caught it but I cut it up for one of the fillets I mangled it up a bit, but I think the best way is to fillet it like a trout. I'm sure everyone knows this but this is how I would do it... Cut in behind the gillplate and pectoral fin at an angle to get the meat in the forehead. Turn the knife and cut through the ribs and along the spine, keeping the blade down to get the most meat off. Stop before you cut of the skin by the tail, flip fillet over. Skin by keeping the blade down and sort of pulling the skin through the knife and cutting/scraping off the meat. Cut out the ribs and you're done.

The meat looks primo. Will cook tomorrow

Yep, just like a trout or red.
