    I just finished the best shrimp risotto I ever ate! She cooked the shrimp heads and shells in chicken broth for the stock for the risotto. It had a bacon, garlic, chive, and lemon zest garnish......ummmmmmm!!

            Heads and shells in the broth, nice, she knows what she is doing. Most people wouldn't think to do that, but it will give you fantastic flavor. Just have to strain it with a good strainer is all. I had scallops over risotto last Wednesday.
